Our Margherita begins with our 72-hour fermented dough, stretched by hand to create the perfect texture. We use only D.O.P. certified San Marzano tomatoes, crushed by hand and lightly seasoned with Sicilian sea salt. Buffalo mozzarella is torn by hand, never pre-shredded, to maintain its delicate texture. After a 90-second bake in our wood-fired oven at 485°C, the pizza is finished with fresh basil leaves and a drizzle of extra virgin olive oil.
