We begin with our 72-hour fermented dough, which provides the perfect canvas for this cheese-focused creation. Rather than a tomato base, we dress the dough with a light layer of fior di latte, followed by carefully portioned amounts of each cheese to ensure balance: creamy taleggio, bold gorgonzola, and aged Parmigiano Reggiano. After baking in our wood-fired oven, we finish the pizza with a light drizzle of acacia honey, fresh thyme leaves, and freshly cracked black pepper to enhance the complex flavor profile of the cheeses.
