Our Diavola Moderna brings contemporary sophistication to the classic spicy pizza, balancing heat with complexity and unexpected sweet notes.
Our Diavola begins with our signature 72-hour fermented dough, stretched by hand to create the perfect canvas. We spread crushed San Marzano tomatoes lightly seasoned with sea salt and dried oregano, then add torn pieces of fior di latte. Before baking, we arrange thin slices of artisanal Calabrian salami and finely chopped Calabrian chilies. After a 90-second bake in our wood-fired oven, the pizza is finished with a light drizzle of hot honey infused with additional chilies, and a few leaves of fresh basil.
A sophisticated heat experience that evolves as you eat: the initial bite delivers the sweet acidity of the tomatoes and the creaminess of the cheese, followed by the complex spice of the Calabrian salami. The chilies provide a building warmth rather than overwhelming heat, while the hot honey creates a fascinating sweet-spicy counterpoint that balances the entire experience. The basil offers momentary aromatic relief between bites. This is a pizza that tells a story with each slice, revealing different dimensions of heat and flavor.
